In a medium size pan, mix together beans, sweet potato puree, taco seasoning, and curry powder. Stir to combined. Turn off the heat as soon as it’s boiled.
Preheat the grill pan. Lay out tortilla and add 1/3 cup of beans on tortilla,top with cheddar cheese. Roll up tortilla and heat on grill pan with seams side down. Heat for 2 minute each or until tortillas turns golden brown.
