Bean Burrito

Ingredients
  • 1 can fat free refried beans
  • ½ cup sweet potato puree
  • ¾ tbsp taco seasoning
  • 1/2 tsp curry powder
  • 3 pcs almond tortilla
  • ½ cup sharp cheddar cheese
Instructions
  • In a medium size pan, mix together beans, sweet potato puree, taco seasoning, and curry powder. Stir to combined. Turn off the heat as soon as it’s boiled.
  • Set aside.
  • Preheat the grill pan. Lay out tortilla and add 1/3 cup of beans on tortilla,top with cheddar cheese. Roll up tortilla and heat on grill pan with seams side down. Heat for 2 minute each or until tortillas turns golden brown.
