10 minute-Shrimp Scampi Spaghetti

Serve 2
  • 6 oz spaghetti, cook al dente
  • 3 tbsp butter
  • 1 shallot, minced finely
  • 2 cloves garlic, minced finely
  • 1 cup shrimp, peeled
  • 3 tbsp white wine
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp dry parsley
  • Parmesan cheese, if desired
  • Pinch of kosher salt
  • Pinch of ground black pepper
  • Heat butter and oil in a large size pan. Add in shallot and garlic, cook until translucent and fragrant for about 2 minutes. Add in shrimp, wine, and lemon juice. Cook until shrimp turns red and broth is bubbling. Add in cooked spaghetti, parsley, salt and pepper. Toss and taste to see if you need more salt and pepper and until pasta is coated. Remove from heat
  • Serve spaghetti with parmesan cheese and more dry parsley.
