Herb Grilled Chicken and Salad

For Grilled Chicken:
  • 2 pcs chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Pinch of salt
  • Pinch of ground black pepper
For Salad:
  • 2 cups Romaine lettuce leaves
  • 1 Roma tomatoes, sliced
  • 1 red onion sliced
  • 1 egg, boiled and crushed
  • Add together all ingredients of the marinade in a large bowl. Use half to marinade chickens, chill the other half in the fridge for salad dressing later.
  • Prepare salad by mixing all ingredients in a large sized bowl. Set aside.
  • Marinade chickens for 20 minutes, once chicken is ready, grill chicken over medium heat on both sides until cooked through.
  • Let chicken to rest for 3 minutes, carefully slice it and put over salad. Drizzle the clean dressing from the fridge over salad.
