Cantonese Style Pan-Fried Noodles

Serve 2


3 cups egg noodle or spaghetti, cooked

3 cloves garlic

3 cloves shallot

1 carrot, julienned

1 spring onion, sliced

½ tomato, sliced

2 tbsp oyster sauce

1 tsp fish sauce

2 tbsp sweet soy sauce

Handful of spinach

Ground black pepper

1 tbsp sesame oil

1 egg, for crispy egg/sunny side up



  1. Heat sesame oil in medium pan over high heat. Add in garlic and shallot and sauté until fragrant. Add carrot, cook for 1 minute and add noodle/spaghetti, tomato, oyster sauce, fish sauce, sweet soy sauce, spinach, spring onion, and ground black pepper. Sauté for 2-3 minutes or until everything is well-combined. Add salt if needed.
  2. Add pan-fried noodle to a plate and topped with crispy egg.
